Surprise Mom with these little gems!!
Here’s a suggestion for a really easy-to-make, fun project for dads and kids to conspire on together. The result is – ta-da! – a delectable dessert, made with love!!
- Coconut Oil
- 1 cup popped popcorn
- 1 cup mini marshmallows
- 1 cup salted peanuts, cashews, almonds or walnuts
- 1 package semisweet baking chocolate
Preheat oven to 250 degrees. *This is optional but necessary for melted marshmallow goodness 🙂
Lightly coat a mini- muffin pan (12) with coconut oil . Divide a mix of popcorn, marshmallows and nuts equally among the mini-muffin cups.
In a microwaveable container, melt chocolate in microwave on high for 45 seconds; stir chocolate. Repeat microwaving and stirring, 15 seconds at a time, until chocolate is melted smooth. Divide chocolate among muffin cups by pouring carefully into the center of each cup, filling each to the top. Gently tap muffin tin on counter to eliminate air bubbles. *This is where you place the pan in the preheated oven for 10-15 minutes (optional). Place in refrigerator and cool until chocolate is fully set.
Remove from pan and place on Mom’s favorite plate and enjoy!!
